Off Track, a sandwich-focused diner, opened in September at 422 Legion Way SE in downtown Olympia.
Business partners Taylor Vroman and Dan Compean run the restaurant, which serves lunch and dinner from 11 a.m. to 9 p.m. daily. It fills the former Gotti Sweets bakery space.
The Olympian first reported on the opening Sept. 29.
Vroman, a trained chef originally from Aberdeen, has worked in the Olympia area for 15 years and has roughly 20 years of experience running restaurant kitchens, with prior stints in the Midwest, New York City and Portland, Oregon. Compean brings front-of-the-house experience as a general manager.
The menu centers on sandwiches, soups and salads. Options include the Big Brie, a ham-and-brie sandwich on sourdough, and the Dipper, a French dip-style sandwich on baguette. The restaurant also offers vegan and vegetarian items and a limited selection of beer and wine.
"A diner, specializing in sandwiches, soups and salads," Vroman told The Olympian when asked to describe the restaurant.
The storefront came with a commercial kitchen already in place. Vroman said the size was right for a restaurant that still has room for on-site dining and takeout.
Gotti Sweets, an Olympia-born bakery run by siblings Rebecca and Arthur Gottlieb, previously occupied the space. The bakery had relocated to Legion Way after operating in the Hawks Prairie shopping area, according to Hoodline.
