Humble Cow Ice Cream and South Puget Sound Community College's Craft Brewing & Distilling program have teamed up on a new flavor: Coconut Stout.

The limited-time ice cream blends stout concentrate brewed at SPSCC's Craft Brewing & Distilling Center in Tumwater with Humble Cow's sweet cream base and toasted coconut. It is gluten-free and contains no alcohol.

The partnership started with Chris Riley, manager of the Percival Creek Tasting Room in Tumwater's Craft District. Riley introduced Humble Cow to the college's brewing staff, the Thurston County Chamber of Commerce reported on Wednesday, Sept. 30.

Jake Holshue, director of Craft Brewing and Distilling at SPSCC, and Chris Patrick, assistant director and lead brewer, produced the concentrate.

Holshue said the project was a team effort across the program. "… It's a great example of what can happen when local makers come together," he said.

The flavor is part of Humble Cow's Oktoberfest lineup and is available at both of the shop's locations while supplies last. The Olympia store is at 4528 Maple Lane SE. The second location is at 2480 Marvin Road NE in Lacey's Hawks Prairie area.

Both stores are open noon to 9 p.m. Sunday through Thursday and noon to 10 p.m. Friday and Saturday.

The collaboration is the latest commercial project from SPSCC's brewing program, which is based at 4200 Capitol Blvd. S., Suite 100, in Tumwater and offers an Associate in Applied Science-Transfer degree (AAS-T). In August 2026, the program released its first student-developed capstone beer, a Sour Saison, through Percival Creek, the Chamber reported.

Proceeds from Percival Creek product sales go back into the brewing program.
